Learn Tortelli d’erbetta – Parma’s Signature Ravioli
Spend an evening cooking side-by-side with friends (“Cucinare con Amici” in Italian). After a welcome spread of antipasti we dive straight into the dough: fresh egg pasta from scratch, rolled thin on traditional machines, then filled with ricotta, spinach and Parmigiano Reggiano. Under chef Lorenzo’s guidance you’ll cut and seal each tortello by hand with the classic zig-zag wheel.
In Parma they say foghé intal butér e sughé intal formaj – drown them in butter, dust with parmesan. That’s exactly how we’ll serve them. If summer nettles are abundant, we’ll fold those in too, just like the mountain villages do.
