Welcome to an evening where the Nordics meet Southern Italy – a dinner in the spirit of the season and its flavors.
This time, we’re inviting you to an evening where history takes center stage on the plate – with a dish so unique it exists only in one small corner of Parma, the village of Colorno. We’re talking about Tortél Dóls di Colorno – sweet-tart, hand-made pasta cushions filled with grape must and rare fruits like cocomero da mostarda, mela cotogna and pere nobili.
Tortél Dóls originated in Colorno, where the dish is said to have been served at the court of Marie Louise of Austria, Duchess of Parma and Napoleon’s second wife. It was brought to the table during festive occasions, often at Christmas or big family gatherings, and became a symbol of the gastronomic elegance of the old duchy.
Today, the recipe is preserved by a local association in Colorno – and this evening you’ll taste it just as they serve it there: with melted butter, Parmigiano Reggiano and a small spoon of tomato purée.
The evening is hosted by Lorenzo, from Colorno, who will share the background of the dish, the origin of its ingredients, and how the tradition survived from the palace kitchens to today’s family tables.
