The aprons go on, stockpots hiss, and Mantua’s most storied pasta steps into the spotlight. After a convivial antipasti spread we’ll work shoulder‑to‑shoulder to create tortelli di zucca—pumpkin‑filled pasta parcels first praised in Renaissance cookbooks around the Gonzaga court of Mantova.
What You’ll Learn
- Pumpkin & amaretti alchemy – how sweet winter squash, crushed amaretti biscuits and a sprinkle of Parmigiano form the signature filling that balances sweet, salty and aromatic notes.
- Hand‑rolled egg dough – knead, roll and fold sheets into classic half‑moon tortelli shapes under our Italian chefs’ guidance .
- Sage‑butter finish – melt butter, sizzle fresh sage and dress the pasta all’onda, finishing with clouds of parmesan for true northern‑Italian comfort .
Evening Flow
- Welcome antipasti – learn the art of Italian “before the meal” bites as you sip and mingle.
- Ingredient briefing: regional pumpkins, amaretti lore and the story of Mantua’s tortelli trail.
- Hands‑on pasta lab in small groups (max 10 guests – every participant rolls and stuffs).
- Communal dinner: your tortelli served with brown‑butter sage sauce and shared stories of Lombardy’s harvest kitchens.
- House dessert to close the night—chef’s seasonal pick.
