The aprons go on, stockpots hiss, and Mantua’s most storied pasta steps into the spotlight. After a convivial antipasti spread we’ll work shoulder‑to‑shoulder to create tortelli di zucca—pumpkin‑filled pasta parcels first praised in Renaissance cookbooks around the Gonzaga court of Mantova.

What You’ll Learn

  • Pumpkin & amaretti alchemy – how sweet winter squash, crushed amaretti biscuits and a sprinkle of Parmigiano form the signature filling that balances sweet, salty and aromatic notes.
  • Hand‑rolled egg dough – knead, roll and fold sheets into classic half‑moon tortelli shapes under our Italian chefs’ guidance .
  • Sage‑butter finish – melt butter, sizzle fresh sage and dress the pasta all’onda, finishing with clouds of parmesan for true northern‑Italian comfort .
