Tonight’s menu:

• Gnudi
Light, fluffy ricotta dumplings made with spinach and parmesan, served with melted butter, nutmeg, and sage. Tuscany’s answer to gnocchi.

• Ribollita
A rich, slow-cooked vegetable stew with beans, bread, and a mix of vegetables.

• Dessert: Ricciarielli
Soft, moist almond cookies from Siena, dusted with powdered sugar. Perfect with a glass of vin santo.
