Meet Regina Rojas – Stockholm’s Peruvian‑Fusion Storyteller 🇵🇪🇸🇪

Chef, cookbook author and founder of “By Regina Rojas,” Regina grew up in Sweden with deep Peruvian roots. Her classes turn migration stories into flavour: ceviche meets soy, aji amarillo flirts with miso, and every guest leaves with both full stomach and fresh perspective.


Italian Roots, Peruvian Heat — Hands‑On Masterclass

In the late 1800s Italian cooks settled in Peru, folding pasta craft and dairy know‑how into local chillies, sweet potato and Andean herbs. This workshop recreates that crossroads cuisine on your own cutting board.

Example Dishes You Might Cook

  • Tiradito al pesto – Peru’s answer to ceviche, glazed with basil‑rocoto sauce
  • Tallarines a la huancaĂ­na con saltado – pasta in creamy aji amarillo sauce crowned with wok‑seared beef & veg
  • Quinotto variations – creamy quinoa “risotto” in either huancaĂ­na crème or bright green pesto
