One evening in a beautiful space somewhere in Hornstull Stockholm - where people come to eat well, drink well, and meet someone they didn’t know before. Come with friends or come alone and make some new.
This is an ephemeral restaurant just for one night. This is Racine.
THE MENU
Starter
The 63-degree egg
A perfect egg, slow-cooked to 63 degrees, resting on a bed of sautéed wild mushrooms. White and green asparagus tips, a wild garlic emulsion, thin shavings of black truffle. Steam, depth, and the first green of the season.
Main
The Pascal Lamb
Shoulder of lamb, braised low and slow until it falls apart. Served over a herb semoule — light, fragrant, threaded with fresh mint and parsley. Spring pea purée alongside, bright green and alive. A lemon yoghurt cream on the side, cool and citrusy. This is the heart of the evening.
Dessert
Breton strawberries
Fresh strawberries at the peak of the season, with a soft orange blossom cream underneath. Crushed shortbread, a few leaves of fresh basil. Something light, something sweet — the natural end to a long, beautiful evening.
Throughout
Wines selected for each moment white, red, and beer throughout the night.
